Why do people choose organic food? Sprays, GM feed, soil biology, animal welfare, and the trust underneath it all. An honest run through every reason people pay more, including the weak ones that don't survive the evidence, and what the premium over free range actually buys you in New Zealand.

You already buy the free range eggs. Around twelve dollars a dozen, and you made your peace with that a while ago; the hen got outside, that was worth paying for. Same shelf, the organic carton is just under fifteen. Three dollars more. You've probably never reached for it, and probably never really asked why anyone does.

I've spent six months pulling apart New Zealand's organic food system for this journal, and the reasons people cover that last few dollars turn out to be more varied, and in some cases more specific, than the stereotype allows.

This isn't a post telling you to buy organic. Some of the reasons below don't survive contact with the evidence. But a few of them might be things you've never actually looked at. Here's the full list, weak arguments included.

The spray question

The most common reason, and the one everyone assumes. Organic certification prohibits synthetic pesticides and herbicides, so buyers avoid the residues.

Here's the part most people on both sides get wrong: conventional food in New Zealand is tested against maximum residue limits, and most of it passes. The residues on your apple are almost certainly within the legal threshold. The organic buyer isn't disputing that. They're disputing the threshold itself; who set it, what long-term low-dose exposure does, and whether "legal" and "fine" are the same word. That's not a settled scientific question. It's a judgement call about uncertainty, and reasonable people land on different sides of it.

What the animal ate

This one took me by surprise when I started digging into eggs and chicken. Most conventional poultry in New Zealand is fed imported soy meal, and most of the world's soy is genetically modified; put the two together and nearly every chicken in New Zealand is eating GM soy. The GM label rules here cover ingredients in the food, not ingredients in the feed. So there's no way to know from the carton.

Organic certification is currently the only label that closes that loop; certified organic feed can't contain GM ingredients. Whether GM feed matters to you is a separate question. But if it does matter to you, and you've been reading labels to avoid it, the label wasn't telling you.

The welfare shortcut

Plenty of organic buyers don't actually care about sprays. They care about how the animal lived, and organic certification happens to be a bundle that includes outdoor access, lower stocking densities, and slower-growing systems. They're paying for the welfare standards and getting the no-spray part as a side effect.

If that's your real concern, organic is one route but not the only one. Free range and free farmed labels exist precisely for this, with their own gaps and their own fine print. I've dug into those gaps at length in the egg guides and the pork series.

Soil and water

The environmental case. Synthetic nitrogen fertiliser and waterway health are connected, and anyone who's followed the state of New Zealand's rivers knows the direction of travel. Organic systems typically run lower stocking rates and no synthetic nitrogen. Buyers in this category are voting on land use with their grocery money.

The honest caveat: organic yields are lower, which means more land for the same food. Whether that trade is net positive for the environment depends on what you're measuring. The research genuinely cuts both ways.

The nutrition one, reframed

I had this down as the weakest reason. More vitamins in organic carrots; evidence thin; move on. Then I looked closer, and I think the usual version of this argument is answering the wrong question.

The vitamin debate measures the plant as if the fertiliser bag were the only thing feeding it. A synthetic fertiliser is, roughly, three things: nitrogen, phosphorus, potassium. Plants grow beautifully on those three. They also grow beautifully while being short of zinc, selenium, copper, molybdenum, and the rest of the trace minerals a body actually runs on. NPK feeds the plant. It doesn't feed you.

Those trace minerals come out of the soil, and getting them into the plant is a biological job, not a chemical one. Fungal networks in living soil reach far past a root's own range and hand back minerals the roots could never get to alone. Microbes unlock nutrients that were sitting there unavailable. This is the part nobody prints on a carton, because you can't certify a photo of it.

New Zealand makes the point cleanly. Large parts of our soil are low in selenium; that's why farmers dose livestock with it. What's in the ground shows up in what grew there, or fails to. A plant grown on synthetic NPK in biologically thin soil can look perfect, yield well, and still be a poorer thing to eat than the same plant grown in soil that's alive with fungi and bacteria. Compost and organic matter feed that soil life. Simple fertiliser feeds the plant and skips the middleman that was doing half the work.

Here's the honest edge, because this journal doesn't get to skip it. Proving all of this the whole way through to your bloodstream is hard, and the studies that try are far fewer than the ones counting vitamin C. The soil mechanism is well established. The human endpoint is under-measured. But under-measured is not the same as debunked, and the usual organic-nutrition argument never gets near the real question. It was never about vitamins. It was about whether the soil was alive.

Taste is a separate claim, and a sturdier one, though the difference there usually comes from variety, freshness, and scale of growing rather than the certificate itself.

What cheap food is made of

Turn the whole thing around. Instead of asking why organic costs more, ask why conventional costs less. The gap isn't magic. It's inputs.

Cheap food runs on a stack. Synthetic nitrogen to push growth without resting the soil. Superphosphate to keep the ground producing. Glyphosate and other herbicides to kill weeds without a hoe. Insecticides and fungicides so a crop doesn't fail. Imported feed to fatten animals fast. Every one of these does a real job, and every one of them lowers the number on the shelf. That was the deal conventional farming made, and it worked. Food takes a smaller slice of the household budget than it did for our grandparents. Nobody should be sniffy about that. Cheap food fed a lot of people who would otherwise have gone short.

Organic is, mostly, the decision to pull that stack out and pay what the food costs without it. No synthetic nitrogen; compost and rotation instead, which is slower and yields less. No blanket herbicide; mechanical weeding and cover crops, which cost labour. The lower yield and the extra hands are most of the price gap. You're not paying for a certificate. You're paying for the inputs that got left out.

Two items on the usual scare list deserve honesty, because in New Zealand they mostly don't apply. Growth hormones first. Hormone implants are legal here only in beef cattle, were never used on more than a sliver of the herd, and by the government's own record haven't been used in New Zealand at all since 2016. They're banned outright in dairy, sheep, and chicken. If you've been avoiding hormone-pumped chicken, you were avoiding something that has always been illegal to sell.

Antibiotics second. They're used, but New Zealand sits among the lowest users in the developed world, antibiotics as growth promoters aren't permitted, and farm sales have fallen year after year. The reason is dull and structural: animals out on grass get sick less than animals packed indoors. Low isn't zero, and resistance is a real problem worth taking seriously. But the picture here isn't the American feedlot, and pretending it is only burns your own credibility.

So the honest stack is shorter than the frightening one. Synthetic fertiliser, herbicides, pesticides, fungicides, imported feed: real, everywhere, and the thing organic actually removes. Hormones and routine antibiotics: mostly someone else's problem, borrowed into the conversation from countries that farm harder than we do.

Here's the part worth sitting with. The organic shopper looks like the one paying extra. They're not. They're the one who declined the discount. That lower conventional price is real, and it's bought with synthetic nitrogen, sprays, and imported GM feed. Choose it and you save money. You also take on the chemistry, whether you meant to or not. The shelf made that trade for you years ago and never put it on the label.

The real reason underneath

Here's what I've come to think after 147 posts on this system. Strip away the stated reasons and most of them reduce to a single thing: the organic buyer doesn't trust the default food supply to tell them the truth, and the certificate means someone independent has checked.

That's it. Not purity, not superfoods. An audit. When Bostock's organic chicken carries a certification, an auditor has walked the farm, checked the feed invoices, and verified the claims. Nobody does that for the word "natural" on a packet, which is legally meaningless and used accordingly.

You might trust the system fine, in which case the extra three dollars buys you nothing. But the person who covers it isn't necessarily buying better eggs. They're buying the checking.

Whether the checking is worth three dollars is your call. At least now you know what's actually for sale.
